Where it began
Jollof rice belongs to a wider West African rice tradition often traced to the Senegambian region and the historic Wolof world. As the dish travelled, each country made it its own.

Nigerian jollof is known for its bold tomato-and-pepper base, warm spice and the smoky character people associate with party jollof. It is celebration food, Sunday food and the dish people expect to see when everyone gathers.
